Porcupine Balls-Paula Dean Style

So my husband and I are mildly obsessed with this dish right now. It's not fancy and it's not exactly rocket science to make, but it's pretty good. It's quick to prepare too. And if it's Paula Deen, it can't be all bad, am I right? Am I right?

In the bottom of a glass baking dish, pour:
3/4 cup of uncooked rice
a 14 ounce can of diced tomatoes including juice
a 10 1/2 once can of beef broth

I always add more rice and water.

For the meatballs, mix together in a bowl:
1 pound of ground beef
1/2 cup of uncooked rice
1 teaspoon dried onion
1 teaspoon seasoned salt
1 teaspoon Italian seasoning

Form into balls and place on top of rice mixture in baking dish. Cover with tinfoil and bake at 350 degrees for one hour.

Anyway, like I said, it's not fancy or anything, but it's good grub. My husband will ask for it like twice a week. I think it's the canned tomatoes and the Italian seasoning that makes it so appealing to us.

If I was not a Vegetarian I would so eat them. They sound yummy!! Maybe I will make them for scott.

When I was little I'd come home and ask my mom what was for dinner. She'd say..."I don't know but it has hamburger in it." Then she'd proceed to create something. I think Pula Dean stole this from her!!!!

Every night at around 8pm, I announce, " K, it's time for bed !"  and my 8 yr old (who we now consider to be autistic) ...
